Start here:
What will it spend the majority of its time doing?
What do you WANT it to do?
What do you feel is important in accomplishing what you want it to do?
For instance: I am lucky enough to live 40 minutes from my local autocross. It's not difficult for me to get there on a hard suspension and sticky tires.
I WANT to be able to drive my Corolla to any track or autocross in North America, enjoy a track day, and drive it home. This means a softer suspension, AC, and cruise control.
An important thing is to always stay on the conservative side of your goals. This will allow you to enjoy it in more situations than you'd have been able to if you got stupid with it and burned through a pile of cash to be staring at a blown motor or a caged track monster.
Work in iterations. Do the simple things first. Small bites.
